Tablas Creek is the original Rhône-pioneering estate on Adelaida Road in west Paso — biodynamic, certified-organic, and considered the benchmark for American Grenache and Roussanne. The bridesmaids book the private terraced patio (max 8) for a guided tasting flight and stay through golden hour with a chef's vineyard picnic. Day two is a Justin sunset dinner at Justin's Restaurant and a soak at the Sycamore Mineral Springs hillside tubs en route. Decompression: morning at the SeaCrest Hotel pool in Cambria before the SLO airport.
