Lunch is a foraged-board picnic on a blanket at the edge of the Esopus Creek. Afternoon at Spruceton Inn for cocktails at the bar and a reading hour by the fire. Saturday dinner is a private chef's table at Phoenicia Diner's after-hours pop-up — six courses keyed to the morning's haul. Day two: a sunrise hike up Giant Ledge with a thermos of coffee, a long Sunday brunch at Brushland Eating House in Bovina. Decompression on the porch of the Spruceton Inn with the New York Times.
