Hudson Valley Foraged Table Weekend — Catskills, NY

Saturday opens with a ramps-and-fiddleheads forage on a private parcel outside Phoenicia in May — wild garlic, ostrich-fern fiddleheads, the first morels if the season cooperates. Lunch is a foraged-board picnic on a blanket at the edge of the Esopus Creek. Afternoon at Spruceton Inn for cocktails at the bar and a reading hour by the fire. Saturday dinner is a private chef's table at Phoenicia Diner's after-hours pop-up — six courses keyed to the morning's haul. Day two: a sunrise hike up Giant Ledge with a thermos of coffee, a long Sunday brunch at Brushland Eating House in Bovina. Decompression on the porch of the Spruceton Inn with the New York Times.

Best forage windows?
Mid-May for ramps and fiddleheads. Late September for chanterelles, hen-of-the-woods, and lobster mushrooms. Avoid July — too humid, too buggy.
How far from NYC?
About 2.5 hours by car to Phoenicia. Trailways bus from Port Authority to Phoenicia is a real option for any bridesmaid skipping the rental.
Are private foragers actually bookable?
Yes — a small Catskills forage scene runs walk-and-cooks for groups. Book 8 weeks out for May/September weekends.
